What eBook formats (i.e. PDF, mobi, Kindle, ePub, etc.) are compatible with iPad2, nook color, iMac and Windows machines?

You should be able to read ePub or PDF on all of the devices you mention. Both the iPad and Nook use ePub files and can also read PDFs. On a Mac or PC, you can use an ePub reader, like Adobe Digital Editions, or a PDF reader, like Adobe Reader.
